Passover (Pesach in Hebrew) is an eight-day Jewish holiday that commemorates the emancipation of the Jewish people from slavery in ancient Egypt. Passover is observed by avoiding leaven such as cookies, crackers, bread, and pasta–it's basically a gluten intolerant's favorite holiday! Instead, Jewish people eat matzah which is more cracker-like than bread-like. The story says that the Jewish people were in a rush to escape Egypt so the bread did not have time to rise.
